As a manager for your event, that is not possible. You would be inundated with notifications. 

If you want to see the activity, you can do so via your Manager account. There are different options:

Item Management. There is a column "bids." You can click on a number in that column to see the item's bid history.

If you would instead track the activity per bidder, go to Bidder Management. You can click on any of the columns to see the activity.
